Salads are a must have addition to any meal whether it is lunch or dinner. Not only are they delicious, they are also very healthy. Today we bring to you a salad medley of three delicious nutrient packed salad, which can be paired with an easy to whip up, home made vinaigrette.
Vinaigrette
Ingredients:
- White vinegar 4 tbsp.
- Olive oil 4 tbsp.
- Salt, pepper to taste
- Mustard paste 1 tbsp.
- Red chilli flakes 1 tsp
- Tabasco sauce 1 tbsp.
- Garlic powder 1 tsp
- Maple syrup 1 tbsp.
Method:
Mix in all the above ingredients and whisk until frothy and well combined.
Kale and Apple Salad:
Ingredients:
- Apple 1 cube cut
- Red reddish sliced 4
- Kale chopped 1 cup
- Walnuts chopped, handful
- Sunflower seed 1 tbsp.
- Cranberries handful
*Vegetables of your choice can be added
Method:
Mix in all the vegetables nuts and seeds and pour in 3 tbsp. of dressing, toss well and serve chilled.
Chickpea Salad:
Ingredients:
- Boiled chickpeas 1 cup
- Tomato 1 cube cut
- Cucumber 1 cup diced
- Carrots 1 cup shredded
- Cabbage shredded 1 cup or choice of your own vegetables
- Spices: Salt pepper, cumin powder 1 tsp, garlic powder 1/2 tsp, paprika 1 tsp, oregano 1/2 tsp
- Olive oil 2 tbsp.
Method:
Pour in olive oil in a pan and add chickpeas when oil is hot then add all above spices and seasonings and mix well, remove from heat and cool completely. Take a bowl and add in all the vegetables and chickpeas then pour in dressing as needed and toss well, adjust seasonings accordingly and serve chilled.
Corn Salsa:
Ingredients:
- Corn 1 cup
- Cucumber diced 1 cup
- Tomatoes diced 1
- Avocado 1 diced
- Jalapeno 1 chopped
- Shallots 1 chopped
- spring onions chopped 1/2 cup
*choice of your own vegetables can be added
Method:
In a mixing bowl pour in all the vegetables, add salt pepper, crushed red chilli 1 tsp, cumin powder 1 tsp, and 1 medium size lime juice, mix all well then pour in 4 tbsp. of vinaigrette and toss, adjust the seasonings accordingly and serve chilled.
