These wraps are tasty and nutritious and loved by children and adults alike. Make them for dinner or pack them as school lunches.
Ingredients:
- Chicken boneless strips 500 gms
- Capsicum cut in strips medium 1
- Onion slices medium 1
- Sweet corn 4 tbsp
- Lemon juice 2 tbsp
- Crushed red chilli 2 tsp or to taste
- Paprika 1tsp
- Garam masala powder 1tsp
- Garlic paste 1tbsp
- Oil 2tbsp
- Salt to taste
- Tortillas as needed
For Salsa:
- Tomatoes 3 medium chopped
- Onion chopped 2 tbsp
- Chopped jalapeno 1 tbsp
- Oil1tbsp
- Salt and pepper to taste
For Sour Cream Sauce:
- Sour cream 1/2 cup
- Lemon juice 2 tbsp
- Crushed red chilli to taste
- Salt and pepper to taste
Method:
- Pour two tbsp oil on medium heat in a pan and add chicken the chicken strips. Stir until they change color.
- Add garlic paste, lemon juice and spices and mix well.
- Let simmer on medium heat for 15 minutes or chicken is fully cooked.
- Add all the sliced vegetables and cook until slightly tender.
- The mixture should be dry, remove from pan and set aside.
For Tomato Salsa
- In the same pan pour some oil on medium hear and add chopped onions and garlic
- Saute and then add tomatoes, jalapenos and seasoning,
- Cook the sauce until all the tomatoes are dissolved and become smooth mix,
- You can blend it if desired or leave it chunky.
For Sour Cream Sauce
- Take a bowl with sour cream
- Add lemon juice and season it well, mix until smooth.
To Serve
- Take a tortilla and spread some tomato salsa on base
- Place chicken and vegetable mix and drizzle generous amount of sour cream sauce,
- Wrap it an grill it in a grill pan on both sides until golden and crispy. Serve hot.
